When our plates finally arrived, we were amazed by the sheer variety of items included in the Gujarati Thali:
Four types of vegetables: A mix of sweet, spicy, and tangy flavors.
Four types of pickles: Spicy, sweet, and everything in between.
Fresh green salad for a refreshing crunch.
Bajra roti and chapati served hot with ghee and jaggery—a novelty for us non-locals.

Standing there, with the setting sun painting the sky in hues of orange and pink, I felt an overwhelming sense of peace. It was a reminder of how small we are in the grand scheme of things and how faith can ground us, no matter where we are.

We indulged in an unlimited Gujarati thali, with steaming hot rotis, creamy dal, spicy curries, tangy pickles, and sweet shrikhand. It felt like the perfect culmination of the culinary journey we had been on.
Night: Non-Stop to Ahmedabad
With full stomachs and heavy eyelids, we piled back into the car for the final stretch of our journey. The roads were quiet, and the night sky was sprinkled with stars. Some of us drifted off to sleep while the driver (our friend with the most energy left) kept us moving forward.
As the clock struck 5 AM, the familiar skyline of Ahmedabad came into view. We had made it back, tired but elated. Standing outside our homes as we unloaded our bags, we exchanged hugs and promises for the next adventure.
